A spelt intolerance is a negative symptom or symptoms that appear after eating spelt or foods that contain or are made from spelt. This is different from a spelt allergy. With an allergy, a person experiences symptoms immediately or almost immediately after eating the offending food. With an intolerance, there is a delay between eating the food in question and experiencing the negative symptoms. In most people, this delay is typically several hours. However, in some, it can take up to a day or more for symptoms to appear. This depends greatly on the individual.

As with all food intolerances, a spelt intolerance is highly individual. Each person will experience not only different symptoms, but also a difference in the severity and duration of their symptoms. The delay between eating the offending food and experiencing the symptoms will also vary depending on the person.
